Roasted Carrot Hummus

You will need
3 medium carrots, peeled and cut in chunks
1 Tbsp cold press olive oil
1 tsp minced ginger
1 can chickpeas, drained
2 tsp fresh lime juice
1 Tbsp tahini
1 tsp garam masala
1/2 tsp cayenne pepper (optional, add more or less according to your taste)
chopped fresh cilantro
salt and Kampot pepper

1 –  pre-heat the oven to 180C. Place the carrot on a baking sheet and season with olive oil, salt and pepper.
2 – roast the carrots until soft, this should take 40-60 min. Remove from the oven and let cool.
3 – in a food processor blend together all the ingredients (except the cilantro) until smooth. If the mixture looks too chunky add a little of water until desired consistency.
4 – check the seasoning, adjust salt/pepper/spices and serve with raw vegetable sticks and/or pita bread.
