Keep on your counter at room temperature. You have to check everyday if they are ripe as these guys tend to go from not ripe to overripe overnight. They are ripe when they are a bit soft when pressing them and when the little wood bit at the top detached itself easily.

How to prepare

Cut them in two, remove the stone (and put it in a pot with soil, pointy bit up and just covered with a couple of mm of soil :), scoop out the flesh. You can eat it like this with a bit of salt and pepper, or you can put it in a salad. They also go very well with shrimps if you like these.

Additionally, they are a great source of lutein, beta carotene, and omega-3 fatty acids. The high level of healthy fats in avocados makes them an ideal food for people who want to feel full between meals. Eating fats is known to slow down the breakdown of carbohydrates, which in turn helps to keep blood sugar levels stable. A 100-gram serving of avocado, which is roughly half an avocado, contains 160 calories, 14.7 grams of fat, 8.5 grams of carbohydrates, 6.7 grams of fiber, and less than 1 gram of sugar. Healthy fats are essential for skin health, the absorption of fat-soluble vitamins, minerals, and other nutrients, and they even support the immune system.
Avocados help with the cholesterol, our vision and lower the risk of cancer
Organic avocado is a heart-healthy fruit as it contains natural plant sterols, especially beta-sitosterol. Consuming beta-sitosterol and other plant sterols help to maintain healthy cholesterol levels and promote heart health. Moreover, avocados are great for vision as they contain lutein and zeaxanthin, two phytochemicals that provide antioxidant protection to minimize damage, including from UV light.
