How to prepare
Trim the edges off the top and bottom of the pattypan, slice down the middle and cut into even sized wedges. Then either sauté for about 3 mins per side or roast in the oven for -15-20mins at 220C. Both methods require a healthy amount of organic olive oil drizzled over the squash.
Do not wash until you are ready to use them. Keep in an open paper bag in the crisper drawer of the fridge. If you have a way of storing at 8-10C they will last longer at this temperature
