- 1 organic swede, peeled and diced
- 1 organic potato, peeled and diced
- 2-3 tablespoons organic butter
- 60 ml organic milk
- Salt and pepper, to taste
- Place the diced swede and potato in a large pot and cover with water.
- Bring the water to a boil, then reduce the heat and let simmer for 20-25 minutes, or until the vegetables are tender.
- Drain the vegetables and return them to the pot.
- Add the butter, milk, salt, and pepper to the pot.
- Mash the vegetables with a potato masher or fork until they reach your desired consistency.
- Taste and adjust seasoning as needed.
- Serve the mashed swede hot as a side dish or as a main meal with some roasted vegetables or a protein of your choice.
